MADISON — Sady’s Bistro on Main owner Sady Zayas already was known for providing the best in quality customer service at her Farmer’s Insurance agency.

Now, the Guatemala native has expanded her customer service outreach to the kitchen of her new bistro in historic downtown Madison which opened March 12.

“I originally planed to create Sady’s as a hobby about two years ago,” Zayas said. “I was trying to create a mix of healthy, good tasting food. So I talked to my dad, my sister and Greg Glass and we decided to create a bistro in the peaceful downtown area.”

Sady’s Bistro is not the first time Zayas has been in the restaurant business. Before moving to the United States, Zayas was involved in a restaurant called “Casa de las Tortas” in Guatemala. Zayas said that he hopes to bring a blend of recipes from home and also typical items found in other bistros across the world.

“It is very mixed,” Zayas said. “Certainly we have a mix of Latin food with the avocado and the guacamole. But one of my favorite things to eat growing up as a child was crepes or ‘crepas’ so that is what I wanted to see. So when somebody doesn’t want a heavy meal, they can sit down and have something pleasant.”

Some of the items that are already generating a buzz include the light yet filling crepes, the turkey avocado sandwich and the pineapple infused smoothie.

Zayas said that the meal is only half of a pleasant restaurant experience adding that the whole meal can be thrown off by bad customer service and that she ensures that patrons at her bistro will be treated with the utmost respect from the moment they open the door.

“You always have to respect others especially when they come to see you,” Zayas said. “So my staff realizes that and that is something I learned and I hope translates from my agency to my bistro.”

Zayas is by no means a hands-off owner. She is involved in every aspect of the business and when she is not busy assisting others at her Farmers agency, she is rotating from position to position at the bistro.

“One thing I learned is that you have to lead by example,” she said. “I cannot just be the boss sitting in the corner telling people what to do. I have to be part of it and so far it has worked out great.”

Sady’s Bistro is located at 14 Main St., Suite B in downtown Madison.
